
In the northern region of Peru, in the province of Jaén, we meet Elias Sanchez and his wife, Rosalina Saavedra. Elias has dedicated 24 years to coffee farming. He began with traditional commercial production—planting his trees, waiting for them to bear fruit, and processing the cherries himself. Recently, Elias joined a local project that deepened his understanding of the entire coffee cycle, from planting and cherry selection to processing and drying. Five years ago, he made a pivotal decision to focus on quality and transition into the specialty coffee market. This shift marked a turning point in his journey, where knowledge became the foundation for producing exceptional coffee. In recent years, Elias has benefited from the guidance of local agronomists, whose support has helped transform his farm from a modest operation into one grounded in best practices. Through this process, he has strengthened his farm management skills and refined techniques across pre-harvest, harvest, and post-harvest stages, significantly elevating cup quality. Today, Elias works alongside his wife and sons, each contributing to the farm’s continued development. His future goals include planting new varieties and improving the drying station. Thanks to his commitment to quality, Elias has been able to improve his family’s quality of life.
