
Matambo is sourced from a tight-knit group of small-scale producers in Gigante, Huila, a region known for its steep mountains, cool winds and distinct light conditions. These factors create ideal microclimates for slow, even cherry maturation, particularly on the highest farms, and play a defining role in the clarity and balance of the cup. Agriculture drives most of Gigante’s economy, with coffee and cacao at its core. The Matambo project took shape in 2008 when five local producers began working more directly with Caravela, who established a purchasing station in Gigante the following year. This shift allowed growers to sell locally and consistently, strengthening both quality and traceability. On the table, Matambo has long been a benchmark Huila profile for Seven Seeds—silky, clean and composed, with just the right lift of fruit and acidity. It’s a coffee that has returned to our menu many times over the years, and its balance and familiarity make it a fitting start to the Autumn lineup.
