Some coffees don’t need reinventing. Ayla Bombe is one of those coffees we’re always happy to welcome back. Ayla Bombe is a washing station in Bensa, Sidama, working with smallholder farmers from the surrounding highlands. Part of Testi Specialty Coffee’s network, it has become a recurring selection through our mates, Melbourne Coffee Merchants. It’s a coffee we’ve come to treasure for its beautifully classic expression of a washed Ethiopian coffee. This lot brings together 74158 and 74112, two JARC varieties selected from Ethiopia’s native coffee genetics. Grown at high elevation and carefully washed, they deliver the clarity, florals and bright acidity that make coffees from this part of the world so distinctive. For us, Ayla Bombe has serious summer energy. Pink lemonade and peach lead the way. It’s light, floral and juicy, with a clean, tea-like finish. An unapologetically classic washed Ethiopian; exactly the kind of coffee we’ll never tire of.
It’s an all-round beauty: from a delightful espresso, a classic pourover, or particularly lovely as batch brew when you want something bright, refreshing and very easy to keep drinking.
