First-generation coffee growers Miguel Zelaya and Susana Ceballos are rebuilding a once-neglected farm in Taipiplaya, Bolivia. Miguel bought the property in 2015 while farming food crops in Argentina, then returned during the pandemic to find its old Typica trees in poor health. Through Agricafe’s Sol de la Mañana mentorship program, the couple established a nursery, planted Caturra and Catuaí, and revived the farm with careful pruning and replanting. This Caturra lot was hand-picked and processed at Agricafe’s Buena Vista mill. After patio drying for 48–72 hours, the whole cherries spent three weeks in warm-air “coco” dryers, named for the cocoa-like colour the fruit develops as it dries.
