
For more over a decade, we've returned to Maria Olimpia's coffee year and year again. Drawn to it's consistency, its clarity and quiet confidence, Maria94well over her 90's94continues to tend to her farm, Finca Los Pinos, in El Cedral, Santa Barbara. This is a special and unique place that we have come to know as being one of the most expressive coffee-growing regions in Honduras. Our connection to this region has been shaped over the years with the support of our exporter Benjamin Paz, whose work has been instrumental in championing Honduran specialty coffee and brining in producers such like Maria to the forefront. Perched high on Santa Barbara mountain, El Cedral's cool mists, limestone rich soils and slow cherry maturation shape coffee that are both vibrant and composed. On Maria's farm, old Bourbon, Typica and Pacas trees grow within a carefully restored ecosystem; one she has nurtured without synthetic inputs, allowing the land to regenerate naturally over time. This balance of environment and intent reveals itself in the cup: tropical and lifted, with notes of apricot and sugarcane underpinned by a clean & structured finish. We continue to return to Maria not just for the quality, but for what her coffee represents; generations of knowledge, a deep respect for the land, and a commitment to doing things properly, year after year.
