Third generation farmer Thelma de Gutierrez grows coffee on just 3.2 hectares, high in the Apaneca Ilamatepec mountain range near Ataco, a town long known for quality coffee. Volcanic soil, a natural spring and native shade trees give the coffee a healthy start, and Thelma uses natural pest control to look after the land. This lot is Red Icatu, every cherry handpicked, then dried whole as a natural on raised beds for up to 20 days and turned often so it dries evenly. Thelma's farm is small, and that is the point. On 3.2 hectares every tree gets looked at, every cherry is picked by hand, and the drying beds are turned often through the day. Ataco has a long reputation for coffee, and this lot shows why.
Roasted with espresso in mind. The chocolate carries through milk, and as a short black the citrus and mandarin stay bright. As filter the fruit opens up even further.
