El Vergel Estate sits in Fresno, Tolima, where Elías and Shady Bayter have spent more than a decade refining their approach to coffee. What began as a family farm has grown into Forest Coffee, a network connecting more than 250 coffee-growing families through a focus on quality, innovation and transparent trade. This lot is naturally decaffeinated using the sugarcane process in Colombia. Green coffee is gently steamed before caffeine is removed with naturally derived ethyl acetate from sugarcane. The beans are then steamed again to remove any remaining residue, preserving the coffee's sweetness, structure and origin character while reducing caffeine by 99%. The result is a decaf that drinks like coffee first, decaf second. Sweet, balanced and full of flavour, without compromising the character that makes Colombian coffee so enjoyable.
