
This fully washed coffee is produced at Jagwan Farm, owned by the Jackson Wanjohi Ndinah. The estate sits on 1.8 hectares in Othaya, Nyeri. Cherry is selectively handpicked and then pulped. Coffee is fermented overnight and washed in clean water to remove any remaining mucilage. Wet parchment is transferred to raised beds where it sundrieds for 14 to 21 days. As it dries, parchment is turned regularly to ensure even drying. PB stands forPeaberry.Peaberryis a name given to a very specific shape of bean. In Spanish,peaberriesare called caracol, which means snail. The name aptly describes the shape of thepeaberrybean, which appears slightly curved in on itself. Peaberriesare the result of a natural mutation in the coffee cherry. Whereas there are usually two beans nestled together in each fruit, in a cherry with apeaberrymutation, only one bean forms. As a result,peaberriesare a single, rounder bean. Peaberrymutations occur in approximately 5% of all coffee.The beansare known for beingrounder,smaller and denser, which can contribute to a more evenroast color, when handled correctly. Many peoplefindpeaberriestohave asweeterflavor profile,as well. Sincepeaberriesare a natural mutation that is not visible from the outside of the cherry,peaberriesmust besorted out during the screen grading stageofdrymilling.Thepeaberryscreenshave the smallest holes, which areoblong to allow the rounder beansto fall through.
