
Hailing from the renowned coffee-growing region of Acevedo, Huila, Colombia, the Peñas Blancas Natural is a truly exceptional offering. Grown atan altitude of 1750 meters above sea level, this coffee thrives in the ideal microclimate, with temperatures ranging between 17 and 246C, contributingto its remarkable quality. The natural processing of the Peñas Blancas Natural begins with the careful harvesting of cherries, each with a Brix level above 22, signifyingoptimal sugar content. Upon arrival at the processing station, the cherries are treated with a thermal shock at 556C for 30 minutes. This step disinfectsthe cherries and eliminates impurities while maintaining their integrity. Following the thermal shock, the cherries undergo a 48-hour oxidation process with the recirculation of "mosto," which enhances their flavours. The next phase involves placing the cherries in plastic bags with an inner liner for an additional 36 hours, allowing controlled fermentation to takeplace. The cherries are then subjected to a two-day solar drying period, followed by 36 hours of mechanical drying to ensure consistency. The drying process is completed when the beans reach a moisture content of less than 11.5%, ensuring stability and longevity in storage
